Average altitude: 250 a.s.l. in Castellina in Chianti and 200 m a.s.l. in Maremma. Soil type: medium alkaline in Castellina in Chianti and quartzose feldspathic sandstone with good presence of skeleton in Maremma. Yield per hectare: 4.5 Tons Planting density: 5000 plants per hectare Training system: spurred cordon Alcoholic fermentation: in steel at temperature 25 – 30°C. Alcoholic fermentation is completed in the presence of the skins. Maceration time: two weeks for all varietals Aging: 18 months barriques and tonneaux Aging in bottle: over 12 months Alcohol content: 14% Vol Notes: Coevo 2015 is perfectly balanced between the tannic ripeness of the Sangiovese and the aromaticity of the Merlot both daughters of a slow and organic period of maturation thus giving the wine a great freshness symbol of longevity. The dark fruits of the Cabernet Sauvignon are enveloping and pleasant on the nose and perfectly complement a more spicy note from the Petit Verdot. A wine that lends itself to long aging
